Every day, Richard Nicotra comes to work and passes six kitchens in his travels through the Hilton Garden Inn. The Staten Island hotelier eats dinner at 11:30 p.m. — and confessed at a press conference Tuesday that “about 40 years I’ve been dieting.”
His desire to eat better and choose foods more wisely pushed he and business partner-wife, Lois Nicotra, to adopt new menus throughout the Hilton as of Tuesday. They are the first Staten Island food service operators to accept Borough President James S. Oddo’s call to eat smart. In fact, the BP wants restaurateurs to offer patrons less fatty, less salty dishes on their menus.
